I would strongly advise offering reliable SSL for POP3, IMAP and SMTP. Even though most e-mail goes in the clear it would be useful to lead the pack with the ability to securely send and receive e-mail. In addition offer the ability to have your servers do SSL SMTP between e-mail servers.
For the purpose of placing messages in server-side (IMAP) folders as they arrive. You may also want to "pipe" certain messages to a script, or reject some automatically.
Examples include Sieve and procmail.
Modwest currently supports Sieve and now that there's a Thunderbird extension to manage Sieve rules, it's easy to manage.
