You are correct in a way; you can install any MTA you want. However, the only one that is integrated with PLesk's mail account managment GUI is Qmail. I would say that is the problem!
I bit the bullet and upgraded to Plesk 9.0.1 from 8.6.0 at the weekend. Plesk 9 now gives a choice of MTA on *nix, Qmail or Postfix and a choice of webmail on a per domain basis, Horde or Atmail.

I thought I'd delay the postfix switch until I was happy with the rest of the upgrade so I paid no attention to it, besides my Qmail is working fine (famous last words).
Then I though I'd investigate the switch, but there was no CP option that swaped them on the click of a mouse. In fact, I couldn't find it anywhere, it had gone awol :( It turned out that Postfix wasn't actually installed as part of the upgrade and doesn't appear in the components list as expected. It seems this may be a feature of upgrading from within the CP or maybe virtuozzo containers need updating?
Anyway, in looking for it I came across this. How do I switch MTA in Parallels Plesk Panel from Qmail to Postfix and vice versa? http://kb.parallels.com/en/5801
I also found this http://kb.parallels.com/en/5811 which suggests process limits need curbing or postfix may hang. If you search that link using "postfix" you'll find other issues which may affect you and which suggest that it may be safer to stay in the trench a while longer.
If anyone has got it going will you please post here?

I'm pretty much willing to put up with anything to use Postfix over Qmail.
